Classic Bolognese

Ingredients for 4 servings:

  • 1 bunch of soup vegetables
  • 1 stalk(s) Celery
  • 1 large onion(s)
  • 1 garlic clove(s)
  • 60 g bacon, fattier
  • 2 tbsp olive oil
  • 500 g minced meat, half and half
  • 70 g tomato paste
  • 125 ml red wine
  • ¼ liter meat broth, hot
  • Salt and pepper, black
  • 1 tbsp paprika powder, sweet
  • 1 tsp oregano, dried
  • 3 tbsp cream or milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and wash the soup vegetables and celery, peel the onion and garlic, and finely dice everything. Fry the diced bacon in oil, then remove the bacon, and fry the vegetables until translucent. Add the minced meat and fry until golden brown and crumbly. Briefly fry the tomato paste, then stir in the wine, stock, and seasonings. Let the sauce simmer gently for at least 1 hour, covered with a crack, but the sauce can be simmered for considerably longer. Then stir in the milk or cream and season to taste. Using an electric chopper for the vegetables significantly reduces the preparation time.
