Beef strips with noodles

Ingredients for 4 servings:

  • 600 g beef from the topside or nut)
  • 250 g mushrooms
  • 100 g butter
  • 1 onion(s)
  • 1 tsp peppercorns
  • 125 ml beef broth
  • 125 ml beer
  • 100 g sour cream
  • 1 tbsp Flour, smooth
  • 1 tbsp mustard, hot
  • salt and pepper
  • e.g. lemon juice
  • oil
  • 500 g tagliatelle pasta

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Waldviertel style

Cook the tagliatelle according to the package instructions until al dente. Cut the meat into even strips. Trim and chop the mushrooms into even pieces. Finely chop the onion and crush the peppercorns with a knife. Heat the oil in a pan until very hot. Season the meat with salt and pepper and fry quickly in the oil. Then remove from the pan and keep warm. Sauté the onions in the frying fat, add the mushrooms and peppercorns, deglaze with beer and let it reduce slightly. Season with salt and pour in the beef broth. Mix the sour cream with flour and mustard until smooth and stir into the sauce. Simmer until slightly creamy. Return the meat, bring the sauce back to a boil briefly, season with salt, pepper and lemon juice and serve with the pasta.
