Beetroot pizza with goat cheese, honey, pine nuts and arugula

Ingredients for 1 servings:

  • 1 pizza dough, homemade or bought, for 1 tray
  • 1 beetroot, cooked
  • 150 g goat’s cheese
  • 15 g pine nuts
  • arugula
  • ½ tbsp olive oil
  • salt and pepper
  • ½ tbsp honey

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Slice the beetroot and toss it in a bowl with olive oil, honey, salt, and pepper. Spread the pizza with goat’s cheese and top with the beetroot mixture and pine nuts. Bake for 12 minutes at 200-220 degrees Celsius (400-425 degrees Fahrenheit) and serve garnished with arugula.
