Beetroot salad

Ingredients for 4 servings:

  • 750 g beetroot
  • 2 apples
  • 2 onions
  • 1 clove(s) garlic
  • 4 tbsp oil
  • 2 tbsp vinegar
  • 1 tsp mustard
  • 1 tsp sugar
  • Salt and pepper, to taste

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Cook the beets, rinse well, and let them cool, then peel, quarter, and slice. Dice the apples and onions and mix with the beets. Make the marinade from oil, vinegar, mustard, sugar, garlic, salt, and pepper and mix with the other ingredients. The salad tastes best when let it marinate for at least 12 hours.
