Ingredients for 1 servings:
- 2 tbsp sunflower oil
- 2 large onions
- 3 eggs
- 100 g pickled beetroot
- 125 g sheep’s cheese
- salt and pepper
- chives
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Finely chop the beetroot and dice the feta cheese. Dice the onions and fry them in a pan with the oil. Once the onions are translucent, add the eggs and let them set. Then add the beetroot and feta cheese and let them warm through. Season to taste with salt, pepper, and chives.
