Ingredients for 5 servings:
- 1 onion(s)
- 1 gherkin(s) or 3 – 4 cornichons
- 2 egg yolks
- 1 tsp, heaped mustard
- 1 tbsp curry ketchup
- 150 ml vegetable oil, neutral
- 1 tbsp balsamic vinegar
- 1 tsp curry powder
- 2 tsp sugar
- Salt
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and finely dice the onion. Finely dice the gherkin or pickles. Combine the onions, gherkins, egg yolks, mustard, curry powder, sugar, balsamic vinegar, and curry ketchup in a tall bowl and blend with a hand blender. Gradually add the oil, continuing to blend until a creamy consistency is achieved. Finally, season with salt.
