Ingredients for 1 servings:

  • 150 g flour
  • 1 tsp baking powder
  • 3 eggs
  • 80 ml olive oil
  • 125 ml milk
  • 100 g cheese, grated
  • Herbs of your choice: basil, parsley, herbs de Provence
  • salt and pepper
  • Olives and/or other ingredients

Briefly mix the flour, baking powder, eggs, and olive oil. Then season with salt and pepper, and add the herbs. Now add the milk and grated cheese to the mixture. The mixture will be quite runny. Once everything is blended, it’s up to your personal taste. Mix in olives, chopped tomatoes, perhaps mozzarella, corn, bacon, finely diced bell peppers, or other vegetables. The quantity of ingredients is just as variable as the choice of toppings. The less you add, the drier the cake will be. When adding bacon, be careful with the salt! Pour the batter into a loaf pan and bake at 160°C (320°F) for at least an hour. Then let it cool and cut into pieces. In France, the cake is served as an aperitif (with sparkling wine or a martini).
