Bell Pepper and Peach Salad
The perfect bell pepper and peach salad recipe with a picture and simple step-by-step instructions.
- 1 piece Yellow pepper
- 1 piece Green pepper
- 1 piece Red onion
- 4 piece Vine tomatoes
- 3 piece Peaches, or nectarines
- 4-5 Weinbergpfirsiche
- 3 tbsp Lemon juice
- 5 tbsp Oil, e.g. pistachio oil or lemon olive oil
- 1 tbsp Chopped mint leaves
- Salt pepper
- 1 tbsp Honey or maple syrup
- Cut the onion into small cubes. Also cut the peppers, tomatoes and nectarines into cubes and mix everything together. If you use peaches it is better to remove the skin.
- Make a dressing out of lemon juice, honey or maple syrup and oil (I like pistachio oil best with this salad, but you can also use olive oil).
- Mix everything together, season with salt and pepper and sprinkle with the chopped mint and fold in.
- The picture shows the salad but served on chicory leaves and without mint. Will update the picture soon.
