Bell Pepper and Peach Salad

The perfect bell pepper and peach salad recipe with a picture and simple step-by-step instructions.

  • 1 piece Yellow pepper
  • 1 piece Green pepper
  • 1 piece Red onion
  • 4 piece Vine tomatoes
  • 3 piece Peaches, or nectarines
  • 4-5 Weinbergpfirsiche
  • 3 tbsp Lemon juice
  • 5 tbsp Oil, e.g. pistachio oil or lemon olive oil
  • 1 tbsp Chopped mint leaves
  • Salt pepper
  • 1 tbsp Honey or maple syrup
  1. Cut the onion into small cubes. Also cut the peppers, tomatoes and nectarines into cubes and mix everything together. If you use peaches it is better to remove the skin.
  2. Make a dressing out of lemon juice, honey or maple syrup and oil (I like pistachio oil best with this salad, but you can also use olive oil).
  3. Mix everything together, season with salt and pepper and sprinkle with the chopped mint and fold in.
  4. The picture shows the salad but served on chicory leaves and without mint. Will update the picture soon.
