Bell Pepper Gnocchi with Rocket and Cream Sauce
The perfect bell pepper gnocchi with rocket and cream sauce recipe with a picture and simple step-by-step instructions.
- 500 g Gnocchi
- 0,5 Red Paprika
- 0,5 yellow Paprika
- 0,5 green Paprika
- 1 Clove of garlic
- 1 tbsp Paprika powder
- 1 bunch Arugula
- 100 ml Soy cream
- 100 ml Soy milk
- 3 tbsp Oil
- Salt and pepper
- Prepare the gnocchi according to the instructions on the packet and let them drain (if you have the time, you can of course make the gnocchi yourself). Finely dice the bell pepper and clove of garlic. Chop the rocket.
- Heat 2 tablespoons of oil in a pan. Fry the gnocchi together with the paprika and garlic cubes and dust the paprika powder over it (hot or sweet, depending on your taste). Season with salt and pepper if necessary.
- Heat 1 tablespoons of oil in a small saucepan. Sauté the rocket in it and deglaze with soy cream and soy milk. Simmer for about 5 minutes on a low setting and stir again and again. Season well with salt and pepper.
- Divide the sauce between two plates and top with the pepper gnocchi. (garnish with fresh rocket and cocktail tomatoes if necessary)
