Ingredients for 4 servings:

  • 2 red bell peppers, cut into pieces, approx. 2 x 2 cm
  • 2 yellow bell peppers, cut into pieces, approx. 2 x 2 cm
  • 2 green bell peppers, cut into pieces, approx. 2 x 2 cm
  • 1 large onion(s), finely diced
  • 4 medium-sized garlic cloves, finely diced
  • 2 tbsp tomato paste (triple concentrated)
  • 6 medium-sized tomatoes, peeled and diced
  • 2 tbsp vegetable broth, clear, granulated
  • 1 small chili pepper(s), red, hot, cut into fine rings
  • 1 tsp, crushed paprika powder, sweet
  • 3 tbsp extra virgin olive oil
  • 1 cup water
  • possibly pepper from the mill
  • possibly basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Steamed sweet peppers, similar to letcho

Sauté the diced onions in olive oil until translucent, add the garlic, and lightly brown both. Stir in the tomato paste and paprika for 1 minute, then sauté the bell peppers for about 3-5 minutes. Add the diced tomatoes and continue simmering over low heat. Add the cup of water and the clear vegetable broth. Reduce, stirring occasionally, until the desired consistency or the desired bite of the vegetables is reached. Season with freshly ground pepper and basil, if desired.
