Ingredients for 4 servings:

  • 1 kg potatoes, cooked the day before
  • 1 tsp salt
  • 50 g butter
  • 50 g smoked bacon, streaky
  • 2 tbsp milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and coarsely grate the potatoes, then toss with salt to loosely coat. Finely dice the smoked bacon. Heat the bacon cubes and butter in a pan. Add the grated potatoes and fry lightly all over, turning frequently. Then push them together to form a cake, press firmly into the bottom, and place the lid on the pan. Cook over low heat for 20 minutes. Then pour 2 tablespoons of milk over the potatoes and cook for another 10 minutes. Serve. Rösti are prepared with slight variations in the various Swiss cantons. The Zurich version omits the bacon, and another preparation is made with raw potatoes.
