Ingredients for 1 servings:

  • 2 eggs
  • 80 g sugar
  • 1 tbsp vanilla sugar
  • 3 tbsp oil
  • ½ pack of baking powder
  • 100 g flour
  • 400 g sour cream
  • 600 g whipped cream
  • 2 packs of cream stabilizer
  • 150 g gelling sugar
  • 50 g sugar
  • 2 tbsp lemon juice concentrate
  • 500 g mixed berries, blueberries, currants, raspberries, strawberries, blackberries
  • 1 pkt. cake glaze, red
  • 2 tbsp sugar
  • 250 ml water

Instructions

Working time approx. 1 hour; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 25 minutes

Red Fruit Compote Cake, for 12 pieces

Beat the 2 eggs, vanilla sugar, and sugar until frothy. Add the 3 tablespoons of oil. Mix the flour and baking powder together and then fold in. Pour into a greased 26cm springform pan and bake in a preheated oven at 160°C for 15 minutes. Whip the cream with the cream stiffener. In a separate bowl, mix the sour cream with the gelling sugar until well combined. Add the lemon juice concentrate and sugar and carefully fold in the whipped cream. Spread the cream on the base, which has been placed in a cake ring. Prepare the red cake glaze according to the instructions (with 2 tablespoons of sugar, 250 ml water), add the berries, mix until everything is smooth and spread it over the cream. Chill for approx. 3 hours. After that, carefully remove the cake ring and serve the cake.
