Ingredients for 1 servings:
- 200 g butter
- 235 g sugar
- 3 packets of vanilla sugar
- 3 eggs
- 2 tsp lemon peel (organic), grated
- ½ pack of baking powder
- 250 g flour
- 1 pinch of salt
- 1 lemon(s), the juice
- 300 ml milk
- 1 packet of pudding powder (vanilla flavor)
- 250 g quark
- 200 ml cream
- 1 kg berries, mixed, fresh or frozen
- 2 tbsp powdered sugar

Preheat the oven to 180°C (160°C fan-assisted oven). In a bowl, combine the butter, 175g sugar, 1 sachet of vanilla sugar, eggs, and lemon zest. Mix the flour, baking powder, and salt and fold in. Spread the batter onto a greased baking sheet. Bake for approximately 20-30 minutes. Remove from the oven and drizzle with lemon juice while still hot. Then let it cool completely. Make a pudding from the milk, pudding powder, and remaining sugar. Stir in iced water until cold, then stir in the quark and 2 sachets of vanilla sugar. Whip the cream until stiff and fold in. Spread the pudding-quark mixture onto the base. Trim and wash the berries, and chop them into smaller pieces if desired. Place the fruit on top of the quark mixture and decorate with icing sugar. You can, of course, use other fruits depending on the season and your taste.
