Berry mix with chia seeds, coconut milk, nuts and honey

Ingredients for 2 servings:

  • 20 g chia seeds
  • 1 handful of strawberries, fresh
  • 1 handful of blueberries
  • 1 handful of blackberries
  • 1 handful of currants, red
  • 200 ml coconut milk
  • 1 handful of mixed nuts
  • 2 tsp honey
  • 1 pinch of vanilla powder

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Total time approx. 25 minutes

Divide the chia seeds between two glasses or bowls and add half of the coconut milk to each. Stir in the vanilla and let the chia seeds soak in the coconut milk for about 15 minutes. If the mixture is too thick, add a little water. Wash and hull the berries, if necessary. Quarter the strawberries and add them to the chia pudding along with the remaining berries. Sprinkle half of the nuts on top and drizzle with honey.
