Berry muffins

Ingredients for 1 servings:

  • 250 g berries
  • 100 g margarine
  • Sweetener, a few dashes, or 150 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 150 ml buttermilk
  • 250 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Also ideal for a variety of berries, e.g. strawberries, raspberries, blueberries, etc.

Grease a 12-hole muffin tin. Chop the berries into small pieces; thaw frozen ones first. Beat the margarine, sugar, vanilla sugar, eggs, salt, and buttermilk with a hand mixer until fluffy. Combine the flour with the baking powder and baking soda and stir into the egg mixture. Then fold the berries into the batter. Fill the muffins into the baking cups and bake in a preheated oven at 200°C (top/bottom heat) for 20-25 minutes. Remove the muffins from the cups after 5 minutes, or they will collapse.
