Ingredients for 1 servings:
- 150 g flour
- 50 g oat flakes, fine
- 50 g almonds, ground
- 50 g hazelnuts, chopped
- 1 tsp cinnamon
- 1 pinch of salt
- 1 packet of baking powder
- 2 large bananas, very ripe
- 1 apple
- 1 egg(s)
- Fat for the mold
- Spice(s) and chocolate drops etc. of your choice
Instructions

Mix the flour, oatmeal, ground and chopped nuts, baking powder, and cinnamon with a pinch of salt. Tip: If desired, you can add other spices (vanilla, star anise, etc.) or other dry ingredients (chocolate chips, coconut flakes, dried cranberries, etc.) at this point; the sky’s the limit. Cut the bananas and apple into large pieces and puree them with the egg in a blender. Alternatively, you can mash the banana with a fork, grate the apple by hand (or simply use applesauce), and mix both with the egg. Add the banana mixture to the dry ingredients and mix well. Pour the batter into a greased loaf pan and bake in a preheated oven at 180°C (convection oven) for 25 to 30 minutes (use a toothpick to check if it’s cooked through!). Tip: If you like it sweet, you can also add a little honey or maple syrup to the banana mixture. However, this isn’t really necessary with very ripe bananas.
