Best chocolate muffins ever

Ingredients for 1 servings:

  • 70 g margarine (half-fat margarine)
  • 150 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • 140 g flour
  • ½ pack of baking powder
  • 1 pinch of salt
  • 75 g cocoa powder, unsweetened
  • 100g sauerkraut Yes! Really!
  • 150 ml water, cold, approx.

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 175°C fan/convection oven. Chop the sauerkraut with plenty of water in a food processor (or simply chop it very finely), rinse thoroughly in a sieve, and squeeze out any excess water. Mix all ingredients until a batter forms, then fold in the sauerkraut last. Bake at 175°C for about 25 minutes. Makes 12 large muffins. Tip: These freeze perfectly and then thaw in the microwave (maximum 1 minute) – this will melt the insides slightly.
