Beurre manié

Spread the love

Ingredients for 20 servings:

  • 100 g butter
  • 100 g flour

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Homemade sauce thickener

Mix butter and flour until a smooth dough forms. Form small balls (cherry-sized) and freeze individually on a plate. Once the balls are solid, place them in a bag and refreeze. This way, they can be removed individually. You’ll need about 2-3 balls to thicken sauces (test them out). You can also use it to refine or thicken soups. This butter/flour mixture gives sauces, as well as soups, a very delicate flavor. This means the flavor of the dish is enhanced rather than overpowered.
