Biene's baked vanilla noodles with apple pieces

Ingredients for 4 servings:

  • 750 ml milk
  • 90 g butter
  • ½ vanilla pod(s) or 1/2 pack vanilla flavoring
  • 4 tbsp sugar
  • 1 tsp lemon peel, grated
  • 250 g tagliatelle pasta
  • 1 pinch of salt
  • 400 g apples, diced
  • 3 eggs, separated
  • 1 pinch of cinnamon
  • 250 ml whipped cream
  • 1 packet of vanilla sugar
  • Ice cream (vanilla ice cream)

For the vanilla noodles, bring the milk to a boil with 40g butter, the vanilla pod (slit lengthwise), 4 tablespoons of sugar, and the lemon zest, then add the pasta. Add a pinch of salt and cook over moderate heat until the pasta is soft and the liquid has almost completely evaporated. Important: Do not turn the heat too high, or the pasta will become too soft, but not too low, or too much liquid will remain. Remove the vanilla pod. Now add the apples to the pasta and mix well. Place both in a buttered baking dish. For the sauce, separate the eggs. Beat the egg yolks with 2 tablespoons of sugar until frothy. Mix in the salt, cream, vanilla sugar, and cinnamon. Fold in the stiff-beaten egg whites and pour over the pasta. Top with butter or margarine flakes and bake in a preheated oven at 180°C (350°F) for about 20 minutes. Serve warm with vanilla ice cream.
