Bismarck herring fruit salad

Ingredients for 4 servings:

  • 4 Bismarck herring(s)
  • 4 gherkins
  • 2 m.-sized onion(s)
  • 2 apples, e.g. Boskoop, Cox Orange or Holsteiner Cox
  • 3 bananas
  • 2 oranges
  • 4 eggs, hard-boiled
  • 4 tsp, levelled black pepper
  • n. B. Salt
  • n. B. vinegar

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Cut all ingredients into small cubes and place in a bowl, except for the eggs. Sprinkle the peppercorns a little at a time over the salad mix, mixing well after each addition. Then add the diced eggs and mix gently again. If desired, add a little salt and/or vinegar before mixing. Store in the refrigerator at +2 to +8°C until ready to serve. Serve as a salad or as a topping on strong bread, such as brown bread. Garnish with two sliced, hard-boiled eggs and parsley, if desired. Note: This is my grandmother’s recipe. The recipe was published 60 years ago. My grandmother received a well-deserved award for this recipe.
