Ingredients for 6 servings:
- 250 g sugar
- 3 eggs
- 1 pinch of salt
- 120 g dark chocolate
- 80 g butter
- 1 jar sour cherries
- 1 cinnamon stick(s)
- 150 ml red wine, dry
- 1 tbsp schnapps (cherry brandy)
- 2 tbsp cornstarch
- 250 g whipped cream
- 100 g sour cream
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
For the chocolate base, preheat the oven to 180 degrees Celsius. Then, beat 150g of sugar with eggs and salt until fluffy. Melt the chocolate and butter in a double boiler and stir this into the sugar and egg mixture. Place the batter on a baking sheet lined with baking paper and bake on the middle rack for about 20 minutes. For the cherry cream, drain the cherries and collect the cherry juice. Bring the juice to a boil, then add 50g of sugar, red wine, cherry brandy, and the cinnamon stick. The whole thing should now simmer for a few minutes. Then remove the cinnamon stick. Mix the cornstarch with 2-3 tablespoons of water and add to the pot. Then add the cherries and cook for about 1 minute. Then let the cream cool. For the cream, whip the cream until stiff peaks, then combine the sour cream and 50g of sugar and fold in. When the chocolate base has cooled, cut out small circles and, starting with the base, layer them in glasses, alternating with the cherry cream and cream.
