Ingredients for 2 servings:

  • 3 tbsp, heaped flour
  • 100 ml milk
  • 2 small eggs
  • salt and pepper
  • 5 tbsp, heaped garden herbs (parsley, chives, thyme, rosemary), chopped
  • 1 pack of herb cream cheese (small pack)
  • ½ small jar creamed horseradish
  • 1 pack of smoked trout fillet(s)
  • 1 medium-sized Roma tomato(s), diced
  • 2 small spring onions, cut into rolls

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 10 minutes

Pancake rolls, sliced ​​cold

For the pancakes, whisk the ingredients thoroughly with a hand mixer. Stir the chopped garden herbs into the pancake mixture and season with salt and pepper. Fry two pancakes in a little oil and let them cool. Once the pancakes have cooled, place them on a piece of plastic wrap. Mix half of the herb cream cheese with the horseradish cream until creamy. Spread this evenly over the pancake. Top with half of the diced tomatoes and the spring onion rolls. Place half of the smoked trout in the center and roll up the pancake using the plastic wrap. Repeat with the second pancake. Then chill both rolls for at least half an hour. To serve, cut the pancakes into small, approximately 2 cm wide slices and arrange them like sushi. This makes a great party snack or appetizer.
