Ingredients for 5 servings:
- 750 g salsify, fresh
- 1 small lemon(s), juice
- 100 g butter, mildly soured
- 30 g breadcrumbs
- 1 tsp, leveled nutmeg, freshly grated
- Salt and pepper, white

a very healthy winter vegetable
Bring a pot of water with lemon juice to a boil. Brush the salsify under running water to remove any sand, then peel it with a vegetable peeler, cut diagonally into 2-3 cm pieces, and cook in simmering lemon water for about 20 minutes. Strain and briefly evaporate the steam. Melt the butter in a pan, add the breadcrumbs, spices, and salsify, and stir frequently until lightly browned. Season with salt. Serve as a side dish with any type of meat.
