Blackberry Cobbler

Ingredients for 1 servings:

  • 145 g sugar
  • 25 g flour
  • 1 pinch of salt
  • 600 g blackberries, fresh
  • 1 ½ tbsp lemon juice
  • 10 g butter, cold
  • 55 g butter, soft
  • 1 ½ tbsp sugar
  • 1 pinch of salt
  • 150 g flour
  • 2 tsp baking powder
  • 60 ml milk
  • 1 large egg(s)

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

with fluffy biscuits on top instead of sprinkles

Preheat the oven to 180°C and grease an 18×26 cm baking dish with butter. Combine the sugar, flour, and salt in a bowl and add the blackberries. Mix gently, drizzle with the lemon juice, and pour everything into the baking dish. Add the butter in small pieces and bake in the oven for about 20 minutes. Shortly before the end of these 20 minutes, prepare the biscuits: cream the butter with the sugar and salt until creamy. Mix the flour with the baking powder, whisk the egg with the milk, and stir in both ingredients alternately. Remove the casserole from the oven and stir gently once. Now, using a tablespoon, drop the batter in four portions onto the berries. These can be oblong or round piles. Return to the oven and bake for another 20-25 minutes. The biscuits should be light brown. Remove and let cool slightly. Then serve in four portions on a dessert plate, each with a biscuit and berries. If desired, sprinkle the biscuits with a little powdered sugar.
