Blackberry curd

Ingredients for 4 servings:

  • 300 g blackberries
  • 500 g quark (low-fat quark)
  • 200 ml cream
  • 1 pack of cream stiffener
  • 3 tbsp sugar (alternatively liquid sweetener as needed)
  • Cinnamon
  • Cocoa powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Trim, wash, and dry the blackberries thoroughly. Mix the low-fat quark with the sugar or sweetener (for diabetics) and 1 teaspoon of cinnamon until smooth. Whip the cream with the cream stiffener until stiff peaks form and fold it into the quark. Put some quark into a glass bowl, then add a layer of blackberries (dry thoroughly, otherwise it will be watery), then layer more quark on top. Repeat this process until all the quark is used up. Finish with quark and sprinkle with cocoa powder. Refrigerate for a while before serving to allow the mixture to infuse. It still tastes great the next day.
