Blackberry yogurt mousse

Ingredients for 4 servings:

  • 300 g blackberries
  • 5 tbsp powdered sugar
  • 400 g yogurt
  • 200 g cream
  • 2 sheets of gelatin
  • 1 lime(s), untreated

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Lightly crush the blackberries, bring to a boil in a saucepan with sugar, and then pass through a fine sieve. Soften the gelatine, mix the fruit pulp with the yogurt and the juice of half a lime. Squeeze out the gelatine, mix with 2 tablespoons of the yogurt mixture, and heat gently until dissolved. Fold the gelatine mixture into the yogurt mixture, whip the cream until stiff, and fold in. Chill in the refrigerator for at least 4 hours, then serve. It also tastes great with blueberries or raspberries. Cut the other half of the lime into thin slices and use as a garnish.
