Blackcurrant with coconut flakes

Ingredients for 8 servings:

  • 250 g butter, very soft
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 5 eggs
  • 250 g flour
  • 50 g corn flour
  • 1 tsp baking powder
  • 1 jar jam (blackcurrant jam)
  • 1 bag of desiccated coconut
  • some lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Lightning cake

Mix blackcurrant jam with a little lemon juice. Preheat oven to approximately 160°C. Grease a baking sheet. Stir together the butter, sugar, vanilla sugar, and eggs until the sugar has dissolved. Combine the flour, cornstarch, and baking powder and slowly add them to the butter mixture. Spread the batter on the baking sheet, sprinkle the jam on top, and sprinkle everything with desiccated coconut. Bake in the oven for approximately 20 minutes. Enjoy.
