Blacksmurf’s Smoked Turtles
The perfect blacksmurf’s smoked turtles recipe with a picture and simple step-by-step instructions.
For the turtles
- 1200 g Mixed minced meat
- Salt and pepper
- 3 Pc. Onions
- 0,25 liter Natural carbonated mineral water
- 150 g Cheese (any)
- 150 g Bacon slices
- 10 Hot dog
For painting
- 300 ml Bbq sauce
- 1 tsp Lingonberry jam
- 1 tsp Orange jam
- 2 Pc. Chili seeds
- 1 tsp Honey
- Heat the sauce in a small saucepan for brushing, add the cranberry and orange jam and stir well. Crush the chilli seeds in a mortar and stir in. If you like it sharper, you can use more. The whole thing mustn’t boil! Finally, the sauce is rounded off with the honey.
- Finely dice the onions and mix well together with the salt and pepper, the minced meat and the mineral water. Then form three portions. A mesh is now made from 12 strips of bacon each. Now comes a portion of minced meat. Put the minced meat out of the weave, open it in the middle, insert a piece of cheese (approx. 10 cm long), close it again and form a turtle body from it. Now the bacon braid is closed all around and the whole thing turned over. The head, tail and legs are formed from the sausages and inserted into the body. Finally, coat the turtles with the warm BBQ sauce. Then the turtles come into the smoker for about two hours at about 110 degrees. Open the smoker after 30 minutes at the earliest and coat the turtles with sauce again. Brush again after another 30 minutes. For the last 45 minutes, put the smoking box with a handful of smoking chips (I prefer the JackDaniels chips) on the embers. Finished! Good Appetite
