Blue Cheese Burger with Bacon Jam
The perfect blue cheese burger with bacon jam recipe with a picture and simple step-by-step instructions.
For the ketchup:
- 1 shot Red wine
- 4 Pc. Onions
- 1 kg Beefsteak tomatoes fresh
- 500 ml Sieved tomatos
- Garlic as needed
- Ginger as needed
- Coriander if necessary
- Chili peppers as required
- Red wine vinegar as requiRed
- Worcester sauce as required
- Pepper as needed
- Brown sugar as needed
- Fennel as needed
For the mayonnaise:
- 150 ml Sunflower oil
- 50 ml Truffle oil
- Fresh truffles as required
- Truffle salt as required
- Mustard as needed
- 1 Pc. Lime juice
- 3 Pc. Egg yolk
- Salt
- Thyme
For the burger buns:
- 3 tbsp Milk warm
- 200 ml Lukewarm water
- 2 tsp Dry yeast
- 3 tbsp Sugar
- 2 Pc. Eggs
- 425 g Flour type 550
- 60 g Flour type 405
- 1 tbsp Salt
- 80 g Soft butter
- Sesame
For the Blue Cheese Cream:
- 200 g Saint Agur
- 200 g Roquefort
- Sour cream
- Worcester sauce as required
- Garlic as needed
For the bacon jam:
- 500 ml Ketchup
- 200 ml Coffee
- Red wine vinegar as requiRed
- Worcester sauce as required
- Brown sugar as needed
- 500 g Bacon
- 5 Pc. Red onions
- Garlic as needed
- Mustard as needed
For the patties:
- 750 g Ground beef
- 2 tbsp Mustard
- 2 Pc. Onions
- Salt and pepper
Ketchup:
- Fry the finely chopped onions, then mix all the ingredients and cook in a saucepan on medium heat for at least 3 hours. Use red wine vinegar, Worcester sauce, brown sugar, salt and pepper to taste.
Mayonnaise:
- Put the egg yolk, salt, lemon juice and mustard in a bowl and whip until frothy.
- Then mix the two oils and add slowly at the beginning, stirring constantly. When the mass begins to emulsify, the oil can be added more quickly until the desired consistency is achieved.
- Then season with lime juice, thyme, fresh truffle, salt, pepper and mustard.
Burger buns:
- Mix the water, milk, sugar and yeast together and let stand briefly. In the meantime, froth an egg.
- Then mix the flour and salt, add the butter and knead. Mix in the yeast mixture and egg. Then knead for at least 10 minutes until the dough is shiny.
- Let rise for an hour, form buns, let rise again for an hour.
- Spread on a baking sheet, brush with egg and sprinkle with sesame seeds. Then bake the buns for 15 minutes at 200 degrees until golden brown.
Blue cheese cream:
- Mix all ingredients. Finished.
Bacon jam:
- Sear the bacon and onions. Add the rest and reduce until a jammy consistency is achieved.
The burger patties:
- Mix the minced meat well with the other ingredients and form five equally sized patties from the meat mixture. Fry these in hot oil in a pan for about 3 minutes on each side.
- Tip 12: As a side dish to the burger, normal fries or sweet potato fries are very good.
