Ingredients for 2 servings:
- 250 g low-fat curd cheese
- 150 g light mascarpone
- 4 tbsp compote (blueberry compote from the jar) and something for decoration
- 12 biscuits (Amarettini)
- 2 tbsp Amaretto
- 1 packet of vanilla sugar
- e.g. sugar or sweetener

light quark dessert with blueberry compote and amaretti biscuits
For each serving, break 5 amaretti biscuits into pieces, place them in wide dessert bowls, and drizzle with amaretto (you can replace some or all of the amaretto with compote juice if you like). Lightly mash the blueberry compote in a bowl and mix with the curd cheese, mascarpone, 6 tablespoons of blueberry juice (from the compote jar), and vanilla sugar. Season the mixture with sugar or sweetener. Lightly mix the amaretti biscuits and spread the cream on top. Place one biscuit on top of each biscuit and drizzle with a little blueberry compote and blueberry juice. If you want the biscuits a little crispier, serve the dessert immediately; otherwise, let it chill in the refrigerator for a while.
