Blueberry ice cream

Ingredients for 1 servings:

  • 300 g blueberries, fresh or frozen
  • 175 ml water
  • 210 g sugar
  • 250 ml cream
  • 1 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours 30 minutes; Total time approx. 3 hours 45 minutes

In a large saucepan, combine the blueberries, water, and sugar. Bring to a boil while stirring, then reduce the heat to low and simmer for about 1 minute. Remove from the heat and let stand for 30 minutes. Transfer the mixture to a taller mixing bowl and puree using an immersion blender. Then pass the mixture through a fine sieve into a bowl. Cover with cling film and refrigerate for at least 3 hours, or overnight. Then whip the cream until it begins to thicken. Stir in the lemon juice, then stir this into the berry puree. In an ice cream maker, process according to the manufacturer’s instructions until ice cream is smooth.
