Ingredients for 4 servings:
- 200 g blueberries, fresh
- 1 m.-large banana(s), very ripe
- 350 ml soy milk (soy drink) (min. 3.5% protein content)
- ½ tsp, levelled vanilla, real, ground
- some blueberries, for garnishing

Sort and wash the blueberries. Cut the bananas into pieces and puree them with the blueberries. Add the soy milk and vanilla and puree everything again thoroughly. Pour the mixture into either a large or several small bowls (about 4) and cover and refrigerate overnight (8-12 hours). The next day, carefully strain the resulting “fruit whey” but don’t throw it away. This “fruit whey” tastes so delicious that you should drink it. Once you’ve poured the cream into a large bowl, you can now scoop out dumplings with a spoon and arrange them on a dessert plate, garnishing them with the blueberries. Once you’ve poured the cream into small bowls, place the cream whole on a dessert plate and garnish with the blueberries. Note: The acidity of the blueberries causes the soy milk or soy protein to curdle, transforming it into a fluffy mousse.
