Blueberry mousse with amaretti biscuits

Ingredients for 4 servings:

  • 300 g blueberries
  • 500 ml Skyr
  • ½ lime(s)
  • 2 tsp, heaped powdered sugar
  • 20 g instant gelatin
  • 8 mint leaves (chocolate mint)
  • n. B. Amarettini

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 10 minutes

Wash the blueberries, setting aside some attractive fruit for garnish. Roughly chop the mint leaves. Place the berries and mint in a blender along with the skyr and blend. Season to taste with powdered sugar and the juice of half a lime. Then stir in the instant gelatin. Place the crushed amaretti biscuits in dessert glasses, pour the mousse on top, cover, and refrigerate overnight. The next day, garnish with amaretti biscuits and blueberries.
