Blueberry muffins

Ingredients for 10 servings:

  • 400 g blueberries
  • 3 eggs
  • 120 g butter or margarine
  • 150 g sugar (raw sugar)
  • ¼ vanilla pod(s), the pulp
  • 300 g flour (wheat flour type 405 or better 550)
  • 1 packet of baking powder
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grease muffin tins thoroughly. Preheat the oven to 160°C (320°F). Sort the blueberries, rinse briefly, and let them dry on a paper towel. Mix the room-temperature ingredients into a batter. Puree a quarter of the blueberries and fold them into the batter along with the rest. Pour into the tins and bake for approximately 15 to 20 minutes. Center rack.
