Blueberry muffins

Ingredients for 1 servings:

  • 100 g butter or margarine, soft
  • 170 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 tsp baking powder
  • 150 ml buttermilk
  • 225 g blueberries
  • Fat for the mold

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Preheat the oven to 175°C (convection oven: 160°C, gas mark 2). Rinse the blueberries. Cream the butter or margarine with the sugar, salt, and vanilla sugar until fluffy. Add the eggs one at a time. Combine the flour and baking powder and add to the batter alternately with the buttermilk. Carefully mix in the rinsed blueberries and pour the batter into the prepared and greased muffin tin. Place in the oven and bake on the middle rack for about 35 minutes.
