Blueberry muffins

Ingredients for 6 servings:

  • 375 g flour
  • 1 tbsp baking powder
  • 140 g sugar (brown)
  • 125 g butter
  • 2 m.-sized eggs
  • 250 ml milk
  • 150 g blueberries
  • e.g. powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C fan/convection oven. Grease a 6-hole non-stick baking dish. Melt the butter and lightly whisk the eggs. Sift the flour and baking powder into a bowl and stir in the sugar. Then make a well in the center. Combine the eggs, milk, and melted butter in a bowl and add all at once to the flour mixture. Briefly mix everything with a fork; the batter may still be lumpy. Then carefully fold in the blueberries. Pour the mixture into the baking dish and bake for 20 minutes until golden brown. Carefully remove the muffins from the dish and let them cool on a wire rack. Sprinkle with powdered sugar, if desired. I use a 12-hole baking dish, and in my oven the baking time is between 15 and 20 minutes.
