Blueberry Speculoos Dessert

Ingredients for 4 servings:

  • 125 g blueberries, fresh or frozen
  • 2 tbsp sugar
  • 1 shot of grape juice
  • 100 g whipped cream
  • 250 g low-fat curd cheese
  • 1 packet of vanilla sugar
  • 60 g speculatius biscuits

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 48 minutes

Wash and drain the blueberries. Then place the berries in a saucepan. Add 1 tablespoon of sugar and a dash of grape juice. Bring the berries to a boil. Then turn off the heat and puree the fruit. Let the fruit puree cool. In the meantime, whip the cream until stiff peaks form. Mix the quark with the vanilla sugar and the second tablespoon of sugar, then fold in the stiff cream. Roughly crumble the speculatius biscuits. Then layer everything in glasses. Start with the speculatius biscuits, then spread the quark cream on top, and finally add the blueberry puree as a mirror. Refrigerate the dessert until ready to serve. Tip: Oreo cookies, brownies, or biscotti also work well instead of speculatius biscuits.
