Blueberry yeast cake with stevia

Ingredients for 4 servings:

  • 100 g flour
  • 10 g yeast, fresh
  • 80 ml milk (0.1% fat)
  • 2 tbsp Stevia
  • 1 tsp sweetener, liquid
  • 125 g blueberries, fresh
  • 1 egg(s)
  • 1 tsp olive oil for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

low in calories and very easy.

Preheat the oven to 180°C fan/convection oven. Grease a small springform pan with olive oil. Combine the flour with the fresh yeast and 80 ml of lukewarm milk (0.1% fat) using a hand mixer (dough hook). Add 1 egg, 2 tablespoons of stevia, and 1 teaspoon of sweetener and mix well, then fold in the berries. Pour the batter into the pan and bake for 30-35 minutes.
