Blueberry – Zucchini – Sheet Cake

Ingredients for 1 servings:

  • ½ cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • ¾ cup oil
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup zucchini, grated
  • 1 ½ cup(s) blueberries, fresh
  • ¾ cup nuts (walnuts or pecans), coarsely chopped
  • ¼ cup powdered sugar, sifted

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Whisk the sugar, eggs, and oil until frothy. Sift the flour, baking powder, and cinnamon together, then add to the sugar, egg, and oil mixture. Stir in the grated zucchini, blueberries, and chopped nuts. Pour the mixture onto a greased baking sheet and bake at 175°C (350°F) until golden brown. After baking, cut into pieces and dust with powdered sugar. Tip: Serve with vanilla ice cream.
