Plum casserole with quark and semolina

Ingredients for 4 servings:

  • 50 g butter
  • 100 g sugar
  • 2 egg yolks
  • 100 g semolina
  • ½ pack of baking powder
  • ½ lemon(s), juice, and grated zest
  • 500 g low-fat curd cheese
  • 2 egg whites
  • 500 g plum(s), drained, halved and pitted
  • 3 cl plum brandy or liqueur (optional)
  • almond flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Cream the butter, sugar, and egg yolks until fluffy. Combine the semolina and baking powder, then stir in along with the lemon juice and zest and the quark. Optionally, add plum brandy or liqueur and stir in. Beat the egg whites until stiff peaks form and fold in. Pour half of the batter into a greased baking dish, layer the drained, halved, and pitted plums on top, and cover with the other half of the batter. Sprinkle with almond slivers. Bake uncovered for 45 minutes at 160°C fan-assisted oven or 200°C conventional oven.
