Buttermilk dessert, often served at Grandma’s

Wash the lemon in hot water and finely grate the zest (the white part tastes bitter!). Squeeze out the juice. Mix the juice with the buttermilk, add the lemon zest, season with sugar, and beat well again. Soak the gelatin in cold water, squeeze it out, and melt it gently on the stovetop (do not boil, or it will not set!). Add a little of the buttermilk to the liquid gelatin and beat. Gradually add a little more, then beat everything thoroughly. Chill in the refrigerator for several hours. This is great to prepare the day before if you’re having guests.
