Bockwurst – cheese – muffins

Ingredients for 12 servings:

  • 1 onion(s)
  • 100 g leek
  • 1 red bell pepper(s)
  • 2 tbsp butter
  • ½ bunch parsley
  • ½ bunch basil
  • 100 g cheese, grated (Emmental)
  • Paprika powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 250 g flour
  • 60 ml oil
  • 2 tbsp mayonnaise (alternatively sour cream)
  • 1 egg(s)
  • 150 ml buttermilk
  • 1 Bockwurst
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely dice the onion, wash and trim the leek, and cut into thin rings. Wash and trim the bell pepper, and finely dice it. Briefly fry everything in a pan with butter for about 2 minutes. Preheat oven to 180°C (160°C fan oven). Wash and finely chop the parsley and basil, and mix thoroughly with the Emmental cheese, paprika, salt, pepper, baking powder, baking soda, flour, and vegetables. Mix together the egg, oil, mayonnaise, and buttermilk. Fold in the vegetable-flour mixture. Fill half of the batter into the muffin cups (line with paper baking cups if necessary). Cut the sausage into 12 slices and place one in each. Fill with the remaining batter. Bake for about 20 minutes, depending on the oven. Serve garnished with herbs.
