Ingredients for 1 servings:

  • 200 g margarine
  • 125 g sugar
  • 1 tbsp vanilla sugar
  • 2 egg yolks
  • 1 tbsp milk
  • 1 lemon(s), grated rind
  • 250 g flour
  • 50 g raisins
  • 50 g almond flakes, peeled
  • 50 g candied lemon peel, diced
  • wafers

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Beat the soft margarine with sugar and vanilla sugar until fluffy. Gradually stir in the egg yolks, milk, and lemon zest. Add the sifted flour a spoonful at a time. Finally, fold in the raisins, almonds, and candied lemon peel. Place the wafers on a baking sheet. Place mounds of dough on top. Bake in a preheated oven at 200°C (top/bottom heat) for about 25 minutes. Makes about 70 wafers.
