Family recipe: Italian spicy tomato Bolognese

Dice the onions, carrots, garlic, and 3-4 slices (about ½ cm thick) from the center of a celery root. Finely chop the parsley and basil. Fry the onions, carrots, garlic, and celery in olive oil in a large pot. When the onions are translucent, add the minced meat and fry well. When the meat is brown and crumbly, add the chopped and passata, stir, and bring to a boil. Add a teaspoon of mustard. Season with vegetable stock, salt, pepper, oregano, and paprika. Add the basil, parsley, and bay leaves. Add a glass of wine and finish with the honey. Bring to a boil again, then simmer on low heat for about 30 minutes.
