Bolognese sauce with vegetables

Ingredients for 6 servings:

  • 500 g minced meat
  • 1 onion(s)
  • 1 garlic clove(s)
  • 3 carrots
  • 3 bell peppers, red, yellow, green
  • 1 can of tomatoes, chopped
  • ½ liter tomato(s), pureed
  • ¼ liter vegetable broth
  • 50 g tomato paste
  • 2 tbsp olive oil
  • salt and pepper
  • Paprika powder, sweet and hot
  • basil
  • oregano

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

First, peel the carrots, onions, and garlic. Trim the peppers. Dice the peppers, carrots, onions, and garlic (do not press them!). Heat the oil in a large pot. Sauté the diced onions and garlic, then gradually add the minced meat. Season with salt, pepper, and paprika and fry everything together. Once the minced meat is browned thoroughly, add the vegetables, gently fold them in, and let them simmer in the pot for about 10 minutes. Then add the tomato paste, the pureed and diced tomatoes, and the vegetable stock. Season to taste with salt, pepper, paprika, and herbs. Let the whole thing simmer for 30-45 minutes. Taste again before serving and adjust the seasoning if necessary.
