Boston Cherry Pie

Ingredients for 4 servings:

  • 500 g morello cherries
  • 3 tbsp liqueur (cherry)
  • 3 tbsp almond slivers
  • 2 eggs
  • 1 pinch of salt
  • 90 g sugar
  • 1 packet of vanilla sugar
  • 30 g butter, soft
  • 60 g flour
  • 100 ml milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cherry casserole

Drain the morello cherries and arrange them in a buttered baking dish. Drizzle evenly with the cherry liqueur and sprinkle with the almond slivers. Separate the eggs, beat the egg whites with the salt until stiff peaks form, and chill. Beat the egg yolks with the sugar and vanilla sugar until frothy, gradually adding the butter. Sift the flour over the mixture and fold in, gradually whisking in the milk. Fold in the beaten egg whites and spread the mixture over the cherries. Bake in a preheated oven at 160°C (320°F) for 40-45 minutes until golden brown.
