Braised onions

Ingredients for 4 servings:

  • 1 ½ kg onion(s), small brown
  • 6 tbsp olive oil
  • 3 bay leaves
  • 1 tsp thyme, dried
  • 500 g diced tomatoes from the can/pack
  • ¼ liter white wine
  • Salt and pepper, from the mill
  • possibly garlic

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

very tasty as a side dish or small main course

Preheat oven to 175°C, pour boiling water over the onion, and let it simmer for 5 minutes. Then drain the water and peel off the brown skin. Pour oil into a casserole dish, add the onions, and toss briefly. Add the remaining ingredients and stir briefly. Braise in the oven for about 1 1/2 hours, stirring occasionally. The onions taste better served cold or warm if they’ve been allowed to simmer for a day or two. I always add a little garlic to the sauce.
