Braised pork heart

Ingredients for 4 servings:

  • 750 g heart(s) (pork)
  • 1 tbsp lard
  • 1 large onion(s), chopped
  • 250 g carrot(s)
  • 1 liter broth, hot
  • 1 can of beans (sharpened beans)
  • 1 bunch parsley, chopped
  • salt and pepper
  • Cayenne pepper
  • savory

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the hearts, removing all tubes and any fat. Cut into medium-sized cubes. Melt the lard in a casserole dish and brown the meat cubes vigorously. Peel and chop the onion, then add and roast. Peel and slice the carrots, and add them as well. Add hot stock. Season with salt, pepper, cayenne pepper, and savory. Cover and simmer for about 75 minutes. After an hour, drain the broad beans and stir in. Season to taste and sprinkle with chopped parsley. Serve hot. Serve with boiled potatoes and a cold beer.
