Oven-baked sausage and potatoes

Preheat oven to 180°C (top/bottom heat). Peel 250g of potatoes and cut into 2cm cubes. Place in a 20x30cm ovenproof dish. Add 3 tbsp olive oil, a pinch of oregano, salt, and pepper, and mix thoroughly to coat the potatoes. Place in the preheated oven. Cut 250g of sausages into 2cm pieces. Peel the tomatoes and cut into 1cm pieces. After 15 minutes, arrange the sausages and tomatoes on top of the potatoes and place the rosemary sprig on top. Bake for another 30 minutes, stirring occasionally. If you’d like a little sauce, transfer everything to a warmed bowl at the end and loosen the pan juices with a little boiling water.
