Sage gnocchi with bacon

Ingredients for 2 servings:

  • 80 g bacon (Tyrolean bacon)
  • 1 bunch of sage
  • 400 g gnocchi
  • 80 g butter
  • 1 cup of cream
  • 30 g Parmesan, aged 18 months, in one piece
  • 1 tsp chili flakes
  • n. B. Pepper from the mill
  • possibly fleur de sel

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Dice the bacon and pick the sage leaves. Coarsely grate the Parmesan cheese. Fry the gnocchi in butter until golden brown. Once the gnocchi have reached the desired color, add the picked sage leaves and diced bacon. Once the bacon is slightly translucent, deglaze with the cream and stir in the Parmesan cheese. Season to taste with chili flakes, pepper, and a pinch of salt (fleur de sel), if desired.
